No Bake Strawberry Cheesecake Bars (Print Format)

Chilled strawberry cheesecake bars layered with a buttery graham cracker crust and fresh strawberry topping.

# Ingredients:

→ Crust

01 - 8 graham cracker sheets, finely crushed
02 - 1/4 cup powdered sugar
03 - 1/2 cup butter, melted

→ Cheesecake

04 - 8-10 medium-sized strawberries
05 - 16 oz cream cheese, softened
06 - 1 cup powdered sugar
07 - 1 tsp vanilla extract
08 - Additional strawberries for garnishing

# Steps:

01 - Line an 8x8 baking pan with parchment paper and spray it with nonstick cooking spray. In a bowl, combine crushed graham crackers, powdered sugar, and melted butter. Stir until combined. Press the crust mixture into the bottom of the pan using the back of a spatula or the bottom of a cup. Freeze for 10-12 minutes.
02 - Chop the strawberries and place them in a microwave-safe bowl. Microwave the strawberries for 25-30 seconds until warm. Mash the warm strawberries with a fork for about 30 seconds. Transfer the strawberry mash to a fine mesh strainer positioned over a bowl. Press the mashed strawberries to extract 3-4 tablespoons of juice. Discard the pulp and seeds.
03 - Using a stand or hand mixer, beat the cream cheese, powdered sugar, and vanilla extract on medium speed until smooth. Pour in the strawberry juice and mix just until combined. Spread the cream cheese mixture evenly on top of the prepared crust.
04 - Freeze the cheesecake for 2-3 hours. Once frozen, transfer the cheesecake onto a cutting board. Using a sharp knife, cut it into squares. Garnish with additional strawberry slices and serve chilled.
