Salty Olive Pasta (Print Version)

# Ingredients:

→ Main Ingredients

01 - 100g feta cheese, cubed (can swap with blue cheese)
02 - 1/2 pound of your favorite pasta
03 - 1 cup large green olives, pitted and roughly chopped

→ Dressing

04 - Juice from 1 lemon
05 - 1 clove garlic, finely minced
06 - Black pepper to your taste
07 - 1/4 cup of olive brine
08 - 1/3 cup good-quality olive oil

# Instructions:

01 - In a big pot, boil water with a pinch of salt and cook the pasta as directed on the box. Drain it, then rinse under cold running water.
02 - Grab a small jar with a lid. Add olive oil, olive brine, garlic, lemon juice, lemon zest, and black pepper. Screw on the lid and shake until it all comes together.
03 - Put the pasta, olives, and feta cubes in a large bowl. Pour your dressing over everything and toss to mix. Taste it and adjust with more salt, lemon juice, or pepper if needed. Enjoy it right away!

# Notes:

01 - Don’t over-salt the boiling water since feta and olive brine are both salty
02 - Let the salad chill for at least 30 minutes before eating
03 - Store in a sealed container for up to 3 days
