Set your oven to 350°F (175°C) and let it heat up while you prep.

Sprinkle both sides of the pork chops with salt and pepper until they're coated.

Heat olive oil in a big pan over medium-high heat. Cook each chop for 3–4 minutes per side until golden brown. Once done, move them to a plate.

In the same pan, throw in the sliced onions. Let them cook for around 10 minutes, stirring every now and then, until softened and sweet.

Combine the cream of mushroom soup, sour cream, garlic powder, onion powder, and thyme (if using) in a bowl. Mix it all up.

Spread half that mixture evenly in a baking dish. Lay the browned pork chops on top, and cover them with the rest of the mixture.

Layer the caramelized onions on top of the chops. Sprinkle shredded cheese on it, followed by a layer of crispy French fried onions.

Cover the dish with foil and bake for 30 minutes in the preheated oven.

Take off the foil and leave it in the oven for another 10–15 minutes until the top is crunchy and the cheese is melted and bubbly.

Let the dish cool for a few minutes after taking it out of the oven, then serve while it’s warm.
