Cut the chicken breasts in half through the middle to create four equal-sized pieces. Place the chicken in a gallon-sized zip-top bag in a single layer, seal the bag, and use a meat pounder or rolling pin to pound the chicken to an even thickness. Alternatively, place the chicken between two layers of cling wrap.

In one shallow dish, combine panko bread crumbs, grated parmesan cheese, remaining salt, pepper, garlic powder, and oregano. In another shallow dish, whisk the egg.

Dip each piece of chicken into the whisked egg, then coat it fully in the breadcrumb mixture. Gently press the crumbs onto the chicken to ensure they stick. Place the breaded chicken on the prepared baking sheet.

Place the baking sheet in the oven on the second from the top rack. Bake for 15 minutes, or until the chicken is fully cooked.

Flip the chicken, pour 1/4 cup of marinara sauce over each piece, and top with mozzarella cheese. Return the baking sheet to the oven and turn on the broiler. Broil for 2 to 4 minutes, until the cheese is melted, bubbly, and the edges of the chicken are browned.
