Oven Baked Risotto (Print Format)

This creamy oven risotto is filled with garlic butter prawns. It's a no-fuss, perfect-for-date-night dish that'll make cooking feel effortless.

# Ingredients:

→ Main Ingredients

01 - 6-8 large raw prawns, tail-on (peeled or leave the shell on)
02 - 2 cups chicken or veggie stock
03 - ¾ cup arborio rice
04 - ½ teaspoon fine sea salt
05 - 1 tablespoon plain butter, unsalted
06 - 3 garlic cloves, finely chopped

# Steps:

01 - Set the oven temperature to 400°F and let it heat up.
02 - Melt the butter on medium heat in a sturdy pot that can also go in the oven and has a snug lid.
03 - Put in the chopped garlic and stir for a minute to bring out its scent. Toss in the rice and stir it around for a bit, just until it smells nutty—about 1-2 minutes.
04 - Add the prawns, stock, and salt into the pot. Give it a good mix and let it come to a lively boil.
05 - Cover the pot tightly with the lid and move it to the oven. Don’t peek for the next 20 minutes.
06 - Take the pot out of the oven, stir up the mixture one last time, and serve it hot.

# Tips:

01 - Stick with arborio rice for the best creamy texture.
02 - Serve it right away for a saucier dish. If it sits too long before serving, you might have to add some extra liquid.
03 - This makes a great meal for a cozy date night.
