Parmesan Mashed Potato Cakes (Print Format)

# Ingredients:

01 - 2 large potatoes (about 1 lb)
02 - 1 egg
03 - 1 cup grated Parmesan
04 - ½ cup grated Parmesan for dredging
05 - ¼ cup chopped parsley
06 - ¼ cup chopped chives or scallion
07 - ¼ cup all-purpose flour
08 - ½ tsp salt, or to taste
09 - ½ tsp pepper, or to taste
10 - 3 tbsp olive oil for frying

# Steps:

01 - Cook the potatoes in gently boiling water until tender, about 20-25 minutes, depending on size. Let them cool completely. Peel.
02 - Place the potatoes in a medium mixing bowl and mash well using a potato masher.
03 - To the same bowl, add the egg, Parmesan, parsley, chives, flour, salt, and pepper. Mix everything well.
04 - Scoop up about ½ cup of the potato mixture and form it into a patty.
05 - Place ½ cup of Parmesan into a shallow dish. Roll the patties in the Parmesan to coat.
06 - Heat olive oil in a large non-stick skillet over medium heat. Add the potato patties and fry for about 3-4 minutes on each side, until golden brown.

01 - Ensure potatoes have completely cooled before making the patties; this helps them hold their shape.
02 - Do not make the patties too thin—they should be around 1 inch thick for easier handling and flipping.
03 - Press Parmesan into the patties while dredging to enhance flavor and crispiness.
04 - Feel free to substitute parsley and chives with other herbs such as dill, cilantro, or basil.
05 - Be patient while frying; allow the cakes to cook for 3-4 minutes undisturbed before flipping.
