Peach French Toast (Print Version)

# Ingredients:

→ For the French Toast

01 - 2 medium eggs
02 - 1 cup whole milk
03 - 1 tablespoon vanilla extract
04 - 2 tablespoons caster sugar
05 - 2 thick slices of challah, brioche, or a good farmhouse-style loaf

→ For the Peaches

06 - 1 tablespoon cornstarch
07 - 1 teaspoon cinnamon
08 - 1 can of peaches in syrup
09 - 2 tablespoons caster sugar

→ For the Cobbler Topping

10 - About 6 (100g) crushed digestive biscuits
11 - 1.5 tablespoons dark brown sugar
12 - 1 teaspoon cinnamon
13 - 60g of butter, melted

→ For Serving

14 - Caramel sauce from the store
15 - Optional: scoop of your favorite vanilla ice cream

# Instructions:

01 - Whisk together milk, eggs, vanilla, and sugar in a mixing bowl. Drench both sides of the bread slices in this mixture. Cook in a frying pan on low heat until golden and beautiful on each side.
02 - Warm up the peaches along with their syrup in a pan, setting aside 1/4 cup of the syrup. Blend the reserved syrup with cornstarch (strain it if it looks clumpy). Pour the cornstarch combo into the pan along with cinnamon and sugar. Stir everything around until the sauce tightens up a little, then take it off the heat.
03 - Smash those digestive biscuits into fine crumbs. Mix them with cinnamon, sugar, and the melted butter until you've got an even, crumbly mix.
04 - Set the toasts on plates. Spoon the warm peach mixture over each. Sprinkle the crumbly cobbler topping on top, drizzle with caramel sauce, and if you're feeling fancy, add a scoop of vanilla ice cream.

# Notes:

01 - If you don’t have digestive biscuits, you can swap them for graham crackers.
