01 -
Preheat oven to 350°F.
02 -
Cut the peaches in the 2 (21 ounce) cans of peach pie filling into smaller pieces using a sawing method. Set aside.
03 -
In a large bowl, cream unsalted butter, sugar, and salt until light and fluffy using an electric hand mixer or stand mixer.
04 -
Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
05 -
Gradually mix in all-purpose flour one cup at a time on medium speed until combined.
06 -
Spread about 3 cups of the dough into a greased 15x10x1-inch baking pan. Spread peach pie filling evenly over the dough. Drop remaining dough by teaspoonfuls over the filling.
07 -
Bake on the middle rack for 30-35 minutes or until golden brown. Cool completely in the pan on a wire rack.
08 -
In a small bowl, mix powdered sugar, vanilla extract, almond extract (if using), and milk (start with a little and add more to reach desired consistency).
09 -
Drizzle the icing over the bars just before serving.
