PB&J Stuffed Cookies (Print Format)

Soft peanut butter cookies with a sweet jelly center, perfect for nostalgic, handheld treats.

# Ingredients:

→ Cookie Dough

01 - Creamy peanut butter, 1 cup
02 - Unsalted butter, softened, 1/2 cup
03 - Granulated sugar, 1/2 cup
04 - Brown sugar, packed, 1/2 cup
05 - Egg, 1 large
06 - Vanilla extract, 1 teaspoon
07 - All-purpose flour, 1 1/2 cups
08 - Baking powder, 1/2 teaspoon
09 - Baking soda, 1/2 teaspoon
10 - Salt, 1/4 teaspoon

→ Filling

11 - Grape or strawberry jelly (or preferred flavor), 1/2 cup

# Steps:

01 - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
03 - Add the egg and vanilla extract, mixing until well combined.
04 - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
05 - Gradually add the dry ingredients to the wet ingredients, mixing to form a smooth dough.
06 - Scoop out 2 tablespoons of dough and flatten into discs. Place half of the discs onto the prepared baking sheet.
07 - In the center of each disc, add 1 teaspoon of jelly.
08 - Top each with another dough disc, pressing the edges to seal. Gently press the edges with a fork for a decorative touch.
09 - Bake for 12-15 minutes, until the edges are golden.
10 - Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
