02 - Kosher salt, to taste
03 - Ground black pepper, to taste
04 - 1 tablespoon butter (or plant-based butter)
05 - 1/2 red onion, thinly sliced
06 - 1 green bell pepper, thinly sliced
07 - 1 red bell pepper, thinly sliced
08 - 4 cups cooked rice

→ Cheese Sauce

09 - 2 tablespoons butter
10 - 3 tablespoons all-purpose flour
11 - 1–2 teaspoons garlic, minced
12 - 1 1/2 cups half-&-half or dairy-free creamer
13 - 1 cup white cheddar cheese, shredded
14 - 1/2 teaspoon ground mustard
15 - 1 teaspoon kosher salt
16 - 1/8 teaspoon ground black pepper

# Steps:

01 - Heat a large cast iron skillet over medium-high heat. Add ground beef to the hot skillet and break apart. Season with kosher salt and ground black pepper. Cook until browned, stirring occasionally. Transfer beef to a bowl using a slotted spoon and drain the excess grease.
02 - In the same skillet, heat 1 tablespoon of butter over medium heat. Add the sliced red onion, green bell pepper, and red bell pepper. Cook for 2-3 minutes, stirring occasionally, until softened to your preference. Remove from heat and set aside.
03 - In a separate saucepan, melt 2 tablespoons butter over medium-high heat. Whisk in the all-purpose flour and minced garlic to form a roux. Gradually add the half-&-half or dairy-free creamer, whisking continuously. Once fully incorporated, remove from heat and stir in the shredded white cheddar cheese, ground mustard, kosher salt, and black pepper until smooth.
04 - Divide the cooked ground beef, vegetables, and rice evenly among serving bowls. Drizzle the cheese sauce over the top. Serve and enjoy.
