Kielbasa Potato Soup (Print Format)

# Ingredients:

01 - 750g (1½ lb) potatoes, peeled and cut into chunks
02 - 300g (10.5 oz) kielbasa sausage, sliced into small pieces

→ Veggies & Flavor Boosters

03 - 1 medium carrot, chopped
04 - 4 garlic cloves, minced
05 - 2 celery stalks, diced up
06 - 30g (½ cup) fresh parsley, coarsely chopped
07 - 1 medium onion, finely chopped

→ Liquids & Creamies

08 - 1 tablespoon olive oil
09 - 1.25 litres (5 cups) chicken broth
10 - 300ml (1¼ cups) whole milk

→ Spices & Add-ons

11 - Salt and pepper—however much you like
12 - 100g (3.5 oz) grated cheddar cheese
13 - ½ teaspoon crushed red chili flakes

# Steps:

01 - Warm up olive oil in your big pot. Toss in the sausage pieces and fry until golden and crisped up, about 4-5 minutes. Take it out and keep aside.
02 - Throw the onion, celery, and carrot into the same pot. Cook for around 5 minutes until soft. Stir in garlic and chili flakes, letting it cook just a minute longer.
03 - Add the potatoes and pour in the chicken broth. Let it come to a boil. Lower the heat, cover it up, and let it simmer for 10-12 minutes until the potatoes soften.
04 - Scoop out a little of the hot soup and mix it with milk to warm it slowly. Then, pour the milk back into the pot along with the sausage and cheese. Heat until thickened. Stir through parsley, taste, and add salt or pepper as needed.
