Hearty Comfort Dinner (Print Format)

Two tasty layers—savory meatloaf on the bottom and fluffy mashed potatoes on top. Finished off with gooey cheese and crispy bacon.

# Ingredients:

→ Meatloaf Layer

01 - ½ cup of BBQ sauce
02 - ⅓ cup of cottage cheese
03 - 1 large egg, beaten lightly
04 - 1 tablespoon of Worcestershire sauce
05 - 1 cup of seasoned bread crumbs
06 - 1 tablespoon of minced garlic
07 - ½ cup of finely chopped white onion
08 - 1 ½ pounds of lean ground beef or turkey

→ Potato Layer

09 - 1 teaspoon of ground black pepper
10 - 1 teaspoon of kosher salt
11 - ½ cup of warm milk or half-and-half
12 - ½ cup of sour cream
13 - ½ cup of unsalted butter
14 - 2 pounds of potatoes, diced and peeled

→ Toppings

15 - 1 ½ cups of shredded cheddar cheese
16 - 6 slices of cooked and crumbled thick bacon

# Steps:

01 - Set your oven to 375°F. Use nonstick spray to coat a 9x13-inch baking dish.
02 - Take a large bowl and mix together the ground beef or turkey, onion, garlic, bread crumbs, Worcestershire, egg, cottage cheese, and BBQ sauce.
03 - Spread the meat mixture evenly in the coated baking dish. Bake it for 30 minutes in the heated oven.
04 - While the meatloaf cooks, add diced potatoes to a pot of water and boil them on medium heat until soft.
05 - After draining the boiled potatoes, toss in the butter. Use a hand mixer for smoothness, then add sour cream, warm milk or half-and-half, salt, and pepper. Blend till creamy.
06 - After 30 minutes of cooking, take the meatloaf out and drain off any leftover grease carefully.
07 - Spoon the mashed potatoes evenly over the meatloaf. Add shredded cheddar and crumbled bacon on top.
08 - Put the layered casserole back into the oven for another 15 minutes. Heat it till the cheese melts and the potatoes are hot all the way through.
09 - Take the finished casserole out and let it sit for a few minutes before digging in.
