Buttery oat crumble and silky pumpkin make these bars a comforting fall treat for sharing or snacking.

# Ingredients:

→ For the Crust and Crumble

01 - All-purpose flour
02 - Old-fashioned oats
03 - Brown sugar
04 - Baking soda
05 - Salt
06 - Ground cinnamon
07 - Melted butter
08 - Vanilla extract

→ For the Pumpkin Filling

09 - Pumpkin puree
10 - Granulated sugar
11 - Egg
12 - Ground cinnamon
13 - Ground nutmeg
14 - Ground ginger
15 - Ground cloves
16 - Vanilla extract
17 - Evaporated milk or heavy cream

# Steps:

01 - Preheat your oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper, leaving extra overhang for easy removal.
02 - In a large mixing bowl, combine the all-purpose flour, oats, brown sugar, baking soda, salt, and ground cinnamon. Add melted butter and vanilla extract, stirring until crumbly. Firmly press two-thirds of the mixture into the bottom of the prepared pan to form the crust. Reserve the remaining mixture for the crumble topping.
03 - In another bowl, whisk together the pumpkin puree, granulated sugar, egg, ground cinnamon, nutmeg, ginger, cloves, vanilla extract, and evaporated milk or heavy cream until smooth and well combined.
04 - Pour the pumpkin filling evenly over the crust in the baking pan. Sprinkle the reserved crumble mixture across the top of the pumpkin layer.
05 - Bake for 40–45 minutes, or until the crumble topping is golden brown and the pumpkin filling has set. Cool completely in the pan before slicing into squares.

# Tips:

01 - Use pure pumpkin puree, not pumpkin pie filling, for the best texture and flavor.
02 - Allow the bars to cool completely before cutting to ensure the filling sets properly.
03 - Chopped pecans or walnuts can be added for extra texture and flavor.
04 - Adjust the spice levels to match your taste preferences.
