# Ingredients:

→ For the chicken

01 - 1 tablespoon unsalted butter
02 - 1 tablespoon extra virgin olive oil
03 - 1 medium onion, chopped
04 - 1.5 lbs boneless, skinless chicken breasts, cut into strips or chunks
05 - 0.5 teaspoon poultry seasoning
06 - 0.5 teaspoon kosher salt
07 - 0.25 teaspoon black pepper

→ For the gravy

08 - 3 tablespoons unsalted butter
09 - 3 tablespoons all-purpose flour
10 - 1.25 cups low-sodium chicken broth
11 - 0.75 teaspoon fresh thyme, chopped (or 0.25 teaspoon dried thyme)
12 - 0.5 teaspoon black pepper
13 - 0.25 teaspoon kosher salt
14 - 1 to 2 tablespoons nonfat plain Greek yogurt (or sour cream)

# Steps:

01 - Heat butter and olive oil in a large skillet over medium heat. Add chopped onion and sauté for about 5 minutes until softened.
02 - Season chicken pieces with poultry seasoning, kosher salt, and black pepper on both sides.
03 - Increase heat to medium-high and add chicken to skillet. Cook for 4-5 minutes on first side until browned, then flip and cook an additional 2-3 minutes until browned.
04 - Remove chicken and onions from skillet and keep warm.
05 - Reduce heat to medium-low and add butter to same skillet. Once melted, whisk in flour and cook for 1 minute to remove raw flour taste.
06 - Gradually pour in chicken broth while whisking continuously until smooth and lump-free. Stir in thyme, kosher salt, and black pepper.
07 - Cook gravy over medium-low heat for 2-3 minutes until slightly thickened.
08 - Return chicken and onions to skillet and stir to coat evenly with gravy. Cover and cook for 3-4 minutes until chicken is cooked through.
09 - Remove skillet from heat and stir in Greek yogurt for creaminess.
10 - Serve chicken and gravy over hot mashed potatoes.
