Sausage Peppers Butternut Squash (Print Format)

Smoked sausage, squash, and peppers roast together for a wholesome, colorful weeknight dinner.

# Ingredients:

01 - 1 lb smoked sausage (such as kielbasa or andouille), sliced into 1/2-inch rounds
02 - 1 medium butternut squash, peeled and diced into 1-inch cubes
03 - 1 red bell pepper, diced
04 - 1 yellow bell pepper, diced
05 - 1 small onion, chopped
06 - 2 tbsp olive oil
07 - 1 tsp smoked paprika
08 - 1/2 tsp garlic powder
09 - 1/2 tsp dried thyme
10 - Salt and pepper, to taste
11 - Fresh parsley, chopped (optional, for garnish)

# Steps:

01 - Preheat your oven to 400°F (200°C).
02 - Place the sausage slices, butternut squash cubes, bell peppers, and onion on a large sheet pan.
03 - Drizzle olive oil over the ingredients on the sheet pan. Sprinkle with smoked paprika, garlic powder, thyme, salt, and pepper.
04 - Toss everything together until evenly coated, then spread out into a single layer.
05 - Bake in the preheated oven for 25–30 minutes, stirring halfway through, until the squash is tender and the sausage is browned.
06 - Garnish with chopped parsley, if desired, and serve warm.
