01 - 1 tablespoon olive oil
02 - 1 pound ground beef
03 - 2 cloves garlic, minced
04 - 1 1.25-ounce package taco seasoning
05 - 12 ounces tortilla chips
06 - 1 15-ounce can black beans, drained and rinsed
07 - 1 cup corn kernels, frozen, canned or roasted
08 - 1 cup shredded cheddar cheese
09 - ½ cup shredded Monterey Jack cheese
10 - 1 Roma tomato, diced
11 - ¼ cup diced red onion
12 - 1 jalapeno, thinly sliced
13 - 2 tablespoons sour cream
14 - 2 tablespoons chopped fresh cilantro leaves

# Steps:

01 - Preheat oven to 200°C (400°F). Lightly oil a baking sheet or coat with nonstick spray.
02 - Heat olive oil in a large skillet over medium-high heat. Add ground beef and garlic, cooking until the beef is browned, about 3-5 minutes. Crumble the beef as it cooks and stir in the taco seasoning. Drain any excess fat.
03 - Place tortilla chips in a single layer onto the prepared baking sheet. Top with the ground beef mixture, black beans, corn, and both shredded cheeses.
04 - Place into the oven and bake until heated through and the cheeses have melted, about 5-6 minutes.
05 - Serve immediately, topping with diced tomato, red onion, jalapeno slices, sour cream, and chopped cilantro.
