Sweet potatoes, sausage, onions, and garlic roast together for a quick and simple one-pan dinner.

# Ingredients:

01 - 2 large sweet potatoes, peeled and cubed
02 - 1 large yellow onion, sliced
03 - 3 cloves garlic, chopped
04 - 2-3 tablespoons extra-virgin olive oil or other cooking oil
05 - 1-2 teaspoons seasoning of choice
06 - 16 oz. smoked or pre-cooked sausage, cut into 1-inch slices (e.g., andouille or kielbasa)

# Steps:

01 - Preheat your oven to 425°F.
02 - Add the cubed sweet potatoes, sliced onion, and chopped garlic to the sheet pan. Drizzle with 2 tablespoons of olive oil and sprinkle with 1-2 teaspoons of seasoning. Toss to coat and spread everything out evenly.
03 - Roast the sweet potatoes, onions, and garlic for 20 minutes. Remove, stir with a metal spatula, spread everything out again, and roast for another 15 minutes.
04 - Add the sliced sausage to the sheet pan, placing the cut sides down to make contact with the hot sheet pan.
05 - Roast everything for another 10 minutes, until the sausage has browned. Serve warm.
