Preheat your oven to 425°F.

Add the cubed sweet potatoes, sliced onion, and chopped garlic to the sheet pan. Drizzle with 2 tablespoons of olive oil and sprinkle with 1-2 teaspoons of seasoning. Toss to coat and spread everything out evenly.

Roast the sweet potatoes, onions, and garlic for 20 minutes. Remove, stir with a metal spatula, spread everything out again, and roast for another 15 minutes.

Add the sliced sausage to the sheet pan, placing the cut sides down to make contact with the hot sheet pan.

Roast everything for another 10 minutes, until the sausage has browned. Serve warm.
