05 - 4 garlic cloves, finely minced
06 - 1 tablespoon tomato paste
07 - 1 1/2 cups beef stock
08 - 2 teaspoons Worcestershire sauce
09 - 1 rosemary sprig
10 - 1 thyme sprig
11 - 1 tablespoon granulated garlic
12 - 1 tablespoon onion powder
13 - 2 teaspoons paprika
14 - 1 teaspoon oregano
15 - 2 bay leaves
16 - 1 packet Ranch seasoning mix
17 - 1 packet brown gravy powder
18 - Salt and pepper, to taste
19 - Oil, for browning meat

→ Goat Cheese Mashed Potatoes

20 - 5-6 large russet potatoes
21 - 1 cup heavy cream, warm
22 - 4 tablespoons butter
23 - 4 tablespoons goat cheese
24 - Salt, to taste

# Steps:

01 - Add 3 tablespoons of oil to a skillet and allow it to heat. Pat dry the chuck roast with paper towel and generously season on both sides with salt and pepper. Sear the roast in the hot skillet for 4-5 minutes per side.
02 - While the roast browns, combine tomato paste, beef stock, Worcestershire sauce, granulated garlic, onion powder, paprika, oregano, Ranch seasoning, and brown gravy powder in a bowl. Mix well.
03 - Place seared chuck roast in the slow cooker. Add the sauce, carrots, celery, onions, rosemary, thyme, and bay leaves. Cover and cook on high for 5 hours or on low for 8-9 hours.
04 - Once the roast is fork-tender, discard any fat, check for seasoning, and add additional salt and pepper as needed. Use the 'keep warm' function until ready to serve.
05 - Wash and peel russet potatoes, then cut into quarters. Place them in a pot with cold water and salt. Boil until fork-tender.
06 - Drain the potatoes, then add butter and let it melt for a few seconds. Warm the heavy cream. Pour in half the cream and mash potatoes using a potato masher. Add goat cheese and remaining cream, then season generously with salt.
07 - Serve the pot roast over warm goat cheese mashed potatoes and enjoy.

# Tips:

01 - Browning the meat before slow cooking adds flavor and richness.
02 - Season generously with salt and pepper right before serving.
03 - Thicken the gravy by mixing 2 teaspoons of cornstarch with 2 teaspoons of cold water, then stir into the slow cooker.
04 - Cut vegetables into large chunks to avoid them disintegrating during cooking.
