01 -
Place dried Great Northern beans in a large pot. Cover with 2 inches of water and soak overnight. Drain and rinse before cooking.
02 -
Add smoked turkey neckbones and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
03 -
Add soaked beans, diced onion, minced garlic, diced celery, bay leaf, and smoked paprika to the pot. Cover and simmer on low heat for 1.5 to 2 hours until beans are tender.
04 -
Remove turkey neckbones from the pot. Shred the meat, discard the bones, and return the meat to the pot. Mash some beans against the pot’s side to thicken the broth. Season with salt, black pepper, and hot sauce to taste.
05 -
In one bowl, whisk cornmeal, all-purpose flour, baking powder, and salt. In another bowl, beat the egg with buttermilk and water. Combine wet and dry ingredients gently until just mixed.
06 -
Heat bacon grease in a heavy skillet over medium-high heat. Drop batter by spoonfuls into the hot skillet. Fry 2 to 3 minutes until bubbles form on top, then flip and cook 2 more minutes until golden and crispy. Drain on paper towels and serve warm with the beans.
