Follow the instructions on the packaging to cook the tortellini, OR try this one-dish option: Heat up 1 tablespoon of olive oil in a big, deep pan, add the tortellini, and toss around on medium-high for about 30 seconds or until lightly golden.

If you're doing the one-pan version, pour the milk over the tortellini in the pan, give it a good mix, and let it cook about a minute.

Lower the heat just a notch, stir in the sour cream, and keep at it for 2-3 minutes until the sauce starts to get thicker.

Add all the greens and veggies at this point—baby spinach, diced green onions, chopped tomato, garlic, and basil or parsley. Stir and season with a bit of black pepper.

Toss in the shredded mozzarella and stir it in until it's melted into the sauce, which will make it even thicker. Take a little bite and add salt or more pepper if it needs it. Extra black pepper goes really well here!

Turn off the heat and serve straight away. Sprinkle each dish with some extra Parmesan for flavor.
