03 - 1/3 cup whole milk
04 - 1 tablespoon of olive oil
05 - 2/3 cup sour cream

06 - 1 clove garlic, finely chopped
07 - 2 small green onions, diced
08 - A handful (1 1/2 cups) of fresh baby spinach leaves
09 - 1 small tomato, diced up
10 - 2 tablespoons of either fresh parsley or basil, minced

→ For Serving

11 - Freshly cracked black pepper
12 - Salt, as needed
13 - Grated Parmesan cheese to sprinkle on top

# Steps:

01 - Follow the instructions on the packaging to cook the tortellini, OR try this one-dish option: Heat up 1 tablespoon of olive oil in a big, deep pan, add the tortellini, and toss around on medium-high for about 30 seconds or until lightly golden.
02 - If you're doing the one-pan version, pour the milk over the tortellini in the pan, give it a good mix, and let it cook about a minute.
03 - Lower the heat just a notch, stir in the sour cream, and keep at it for 2-3 minutes until the sauce starts to get thicker.
04 - Add all the greens and veggies at this point—baby spinach, diced green onions, chopped tomato, garlic, and basil or parsley. Stir and season with a bit of black pepper.
