Tender crepes filled with creamy cheesecake and strawberry compote, topped with rich chocolate.

# Ingredients:

→ Crepes

01 - 1 cup all-purpose flour
02 - 2 large eggs
03 - 1¼ cups whole milk
04 - 2 tablespoons melted butter
05 - 1 tablespoon granulated sugar
06 - 1 teaspoon vanilla extract
07 - Pinch of salt

→ Strawberry Cheesecake Filling

08 - 8 oz cream cheese, softened
09 - 1 cup heavy whipping cream
10 - ⅓ cup powdered sugar
11 - 1 teaspoon vanilla extract

→ Strawberry Compote

12 - 2 cups fresh strawberries, diced
13 - ¼ cup granulated sugar
14 - 1 tablespoon lemon juice
15 - 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for a thicker sauce)

→ Topping

16 - ½ cup melted dark chocolate
17 - Fresh strawberries for garnish (optional)

# Steps:

01 - Whisk together the flour, eggs, milk, melted butter, granulated sugar, vanilla extract, and salt until smooth. Allow the batter to rest for 20–30 minutes.
02 - Heat a lightly buttered non-stick skillet over medium heat. Pour a small amount of batter into the skillet and swirl to create a thin layer. Cook each crepe for about 1 minute per side. Repeat with the remaining batter.
03 - Combine diced strawberries, granulated sugar, and lemon juice in a saucepan. Cook over medium heat for 6–8 minutes until softened. Add the cornstarch slurry if a thicker consistency is desired. Let cool.
04 - Beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Whip heavy cream to stiff peaks and gently fold it into the cream cheese mixture until light and fluffy.
05 - Spread a layer of cheesecake filling over each cooled crepe. Top with strawberry compote, then roll each crepe tightly.
06 - Arrange crepes on a serving plate, drizzle with melted dark chocolate, and garnish with fresh strawberries if desired. Serve immediately.

# Tips:

01 - Ensure the crepes are completely cooled before adding the filling to prevent melting.
02 - Chill the cheesecake filling for 15–20 minutes for a firmer texture.
03 - Fresh strawberries deliver the best flavor, but frozen strawberries are an acceptable substitute.
04 - White chocolate or milk chocolate can replace dark chocolate, depending on personal preference.
05 - These crepes are best served chilled or slightly cool for an authentic cheesecake texture.
06 - Store leftover crepes in the refrigerator for up to 2 days.
