# Ingredients:

→ Main Ingredients

01 - 2 cups fresh or frozen blueberries (or mixed berries)

→ Brine Mixture

02 - 1/2 cup apple cider vinegar
03 - 1/4 cup water
04 - 1/3 cup sugar
05 - 1 tablespoon honey
06 - 1/2 teaspoon salt
07 - 1/2 teaspoon black pepper
08 - 1/2 teaspoon chili flakes
09 - 1/2 teaspoon smoked paprika
10 - 1/2 teaspoon mustard seeds
11 - 1/2 teaspoon grated ginger
12 - 1 clove garlic, lightly smashed

# Steps:

01 - In a saucepan, combine the apple cider vinegar, water, sugar, honey, and salt. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves.
02 - Add the black pepper, chili flakes, smoked paprika, mustard seeds, grated ginger, and smashed garlic. Stir to combine.
03 - Add the berries and simmer gently for 5–7 minutes, just until they begin to soften and absorb the flavors.
04 - Remove the saucepan from heat and allow the mixture to cool to room temperature. Transfer the berries and brine into a clean glass jar.
05 - Seal the jar and refrigerate for at least 24 hours before serving to allow the flavors to fully develop.

# Tips:

01 - For a brighter flavor, add orange zest or lemon zest to the brine.
02 - Store in an airtight glass container to maintain freshness and prevent cross-flavor contamination.
03 - The flavor intensifies after 2–3 days of refrigeration.
