Sweet Apple Donuts (Print Format)

Juicy apple slices fried in a light batter and topped with cinnamon sugar. Like fritters but with whole apple rings.

# Ingredients:

01 - 4 apples, medium (such as Gala, Golden Delicious, or Granny Smith).
02 - ½ cup sugar plus 2 extra tablespoons, kept apart.
03 - 1 teaspoon cinnamon and a pinch more (¼ teaspoon).
04 - A single large egg.
05 - Vanilla extract, ½ teaspoon (optional).
06 - ¾ cup full-fat or 2% milk.
07 - 1 cup and a couple more tablespoons all-purpose flour.
08 - 1 and ½ teaspoons baking powder.
09 - A small ½ teaspoon of salt.
10 - Use coconut or vegetable oil for frying.

# Steps:

01 - Heat about an inch of oil in a big heavy pan or cast iron skillet to 365°F.
02 - Slice apples into rings about ¼-inch thick and remove centers, leaving ⅜-inch wide rings.
03 - In a little bowl, stir together ⅓ cup sugar with 1 teaspoon of cinnamon until well blended.
04 - Whisk together egg and milk, then stir in the flour, the rest of the sugar, baking powder, and a pinch of salt. Mix until the batter's smooth.
05 - Coat each ring in batter and toss them into the hot oil. Fry about 3-4 at a time until golden and puffy, roughly 1-2 minutes per batch.
06 - Place fried rings on paper towels to soak up extra oil, then roll still-warm rings in the cinnamon sugar mix.
