In a large bowl, add the shredded chicken, mayonnaise, diced pickled jalapenos, pickled jalapeno juice, and shredded cheddar cheese. Season with salt, pepper, cumin, chili powder, and cayenne pepper. Stir until evenly combined.

Evenly distribute the chicken mixture onto the bottom of one tortilla. Optionally, add extra cheese before adding the filling. Place another tortilla on top of each prepared tortilla.

In a large skillet, add a small amount of oil or cooking spray. Toast each quesadilla on both sides over medium-high heat until golden brown.

Transfer cooked quesadillas to a cutting board, slice into individual pieces, and serve with Taco Bell Quesadilla Sauce or a mixture of sour cream and salsa.
