Copycat Taco Bell Chili Cheese (Print Format)

# Ingredients:

01 - 1 pound ground beef
02 - 1 medium yellow onion, diced
03 - 3 tablespoons chili powder
04 - 1 teaspoon cayenne pepper
05 - 1 teaspoon salt
06 - 2 cups water plus 2 tablespoons, divided
07 - 2 tablespoons cornstarch
08 - 1 (16 ounce) can refried beans
09 - 1 (6 ounce) can tomato paste, about 6 tablespoons
10 - 3 cups cheddar cheese
11 - 10 (10 inch) flour tortillas

# Steps:

01 - Heat a large skillet on medium-high heat, add the ground beef and diced onion, and cook until browned. Drain the extra fat and add the chili powder, cayenne, and salt. Stir to combine and add 2 cups of water.
02 - In a small bowl, mix the cornstarch with the remaining 2 tablespoons of water, then add to the meat mixture. Let the mixture come to a simmer to thicken.
03 - Stir in the refried beans and tomato paste until fully combined.
04 - Add 1 1/2 cups of cheddar cheese to the skillet and mix until melted.
05 - Place a tortilla on a cutting board. Add a pinch of shredded cheese followed by 1/4 to 1/2 cup of the meat mixture. Fold in the sides and roll into a log. Warm tortillas in the microwave for 15 seconds to soften if needed.
06 - Serve the burritos with sour cream and salsa if desired.
