01 - 2.27 kg golden potatoes
02 - 120 ml vegetable oil

→ Fiesta Potato Coating

03 - 30 g all-purpose flour
04 - 60 g cornstarch
05 - 2 tsp paprika
06 - 3 tsp salt
07 - 0.125 tsp cayenne pepper
08 - 0.5 tsp black pepper

# Steps:

01 - Place washed and trimmed whole potatoes in 950 ml water and boil for 20 minutes until tender.
02 - Dice boiled potatoes into 2.5 cm chunks. Toss evenly with vegetable oil. In a separate bowl, combine all coating ingredients and mix thoroughly. Toss diced potatoes with the coating until fully coated.
03 - Divide coated potatoes evenly onto two large greased baking sheets, spreading them out to avoid overcrowding. Bake at 220°C (425°F) for 40 minutes, rotating the baking sheets midway for even cooking.
04 - Serve potatoes warm, optionally accompanied by nacho cheese sauce and sour cream, or use as filling for burritos or tacos.

# Tips:

01 - To reheat, bake at 200°C (400°F) for 8–10 minutes or until sizzling. For enhanced flavor, consider adding dried onion, garlic powder, cumin, or chili powder to the coating mixture.
