Place washed and trimmed whole potatoes in 950 ml water and boil for 20 minutes until tender.

Dice boiled potatoes into 2.5 cm chunks. Toss evenly with vegetable oil. In a separate bowl, combine all coating ingredients and mix thoroughly. Toss diced potatoes with the coating until fully coated.

Divide coated potatoes evenly onto two large greased baking sheets, spreading them out to avoid overcrowding. Bake at 220°C (425°F) for 40 minutes, rotating the baking sheets midway for even cooking.

Serve potatoes warm, optionally accompanied by nacho cheese sauce and sour cream, or use as filling for burritos or tacos.
