# Ingredients:

→ Base ingredients

01 - 2 tablespoons vegetable oil
02 - 8 8-inch flour tortillas

→ Toppings and fillings

03 - 1 cup refried beans, warmed
04 - 1 cup cooked, Mexican-seasoned ground beef
05 - 1/2 cup taco sauce
06 - 1/4 cup red enchilada sauce
07 - 1 cup shredded mozzarella cheese
08 - 1 cup shredded Mexican cheese blend
09 - 1/2 cup diced tomatoes
10 - 3 tablespoons black olives
11 - 3 tablespoons chopped green onions

# Steps:

01 - Preheat the oven to 400°F.
02 - Heat vegetable oil in a non-stick skillet over medium heat, and once hot, fry the tortillas one at a time until golden brown on both sides, about 2-3 minutes per side. Remove the fried tortilla and drain on a paper towel-lined plate.
03 - Layout 4 fried tortillas on a baking sheet. Spread with an even layer of refried beans. Add a layer of cooked ground beef, and half of the mozzarella cheese.
04 - Place the remaining fried tortilla on top of each one.
05 - Combine the taco sauce and enchilada sauce in a small bowl and mix well. Spread 2 tablespoons of the sauce over each of the tortillas.
06 - Sprinkle with the remaining mozzarella cheese and the Mexican cheese blend. Bake at 400°F for 3-4 minutes until the cheese has melted.
07 - Top the Mexican pizzas with diced tomatoes, black olives, and chopped green onions. Slice into quarters and serve hot.
