Preheat the oven to 350°F (175°C). Spray a 9x13-inch dish with nonstick spray.

Gently crush the chips. Set aside 2 cups of finely crushed chips for the casserole base and 1 cup of loosely crushed chips for topping.

In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned. Drain any excess grease.

Add the minced garlic to the skillet and cook for 1 minute. Stir in the frozen corn, taco seasoning, diced tomatoes with green chilies, and 2 cups of finely crushed Doritos. Optionally, add black beans at this stage.

Remove the skillet from heat. Stir in the sour cream and 2 cups of Mexican blend cheese until evenly combined.

Pour the mixture into the greased baking dish. Bake in the preheated oven for 5 minutes, or until warmed through.

Remove the baking dish from the oven. Sprinkle 1 cup of cheese on top, followed by 1 cup of loosely crushed Doritos. Return to the oven and bake for an additional 5 minutes, or until the cheese melts.

Remove the casserole from the oven and serve immediately. Garnish with sliced green onions, diced tomatoes, shredded lettuce, avocado, or extra sour cream, if desired.
