Taco Doritos Casserole Bake (Print Format)

Savory beef, corn, and cheese layers finished with crushed Doritos and baked to golden perfection.

# Ingredients:

01 - 1 pound lean ground beef
02 - ½ yellow onion, diced
03 - 1 teaspoon minced garlic
04 - 1 packet taco seasoning
05 - 12-ounce bag frozen corn
06 - 14.5-ounce can petite diced tomatoes with green chilies, not drained
07 - 1 cup sour cream
08 - 2 cups finely crushed Doritos
09 - 1 cup loosely crushed Doritos
10 - 3 cups Mexican blend cheese
11 - 1 cup black beans, optional
12 - Sliced green onions, diced tomatoes, shredded lettuce, avocado, sour cream for garnish, optional

# Steps:

01 - Preheat oven to 350°F (175°C). Spray a 9x13-inch baking dish with nonstick spray.
02 - Gently crush the Doritos. Crush two cups finely, similar to breadcrumbs, and keep one cup in larger chunks for topping. Use a Ziploc bag if necessary.
03 - In a large skillet, cook the ground beef and diced onions over medium heat until browned. Drain any excess grease.
04 - Add minced garlic to the skillet and cook for one minute. Mix in the frozen corn, taco seasoning, diced tomatoes with green chilies, and two cups of finely crushed Doritos. Add black beans if desired.
05 - Remove the skillet from heat. Stir in the sour cream and two cups of the Mexican blend cheese.
06 - Pour the mixture into the greased 9x13-inch casserole dish. Place in the oven and bake for 5 minutes until heated through.
07 - Top with one cup of Mexican blend cheese and one cup of loosely crushed Doritos. Return to the oven and bake for an additional 5 minutes until the cheese is melted.
08 - Remove from the oven and serve warm. Optionally garnish with green onions, diced tomatoes, shredded lettuce, avocado, and sour cream.
