Turkey Sweet Potato (Print Format)

An easy one-pan mix of ground turkey, sweet potatoes, and colorful veggies. Perfect for quick, wholesome dinners.

# Ingredients:

→ Main ingredients

01 - 1 yellow onion, diced finely
02 - 1 bell pepper, chopped (go for any color you like)
03 - 2 medium sweet potatoes, peeled and cut into tiny cubes
04 - 2 cloves of garlic, minced or crushed
05 - 1 pound of ground turkey
06 - 1 tablespoon of olive oil (or use avocado oil if that's handy)

→ Seasonings

07 - Salt and some freshly cracked black pepper to match your taste
08 - 1 teaspoon of ground cumin
09 - 1 teaspoon smoked paprika

→ Finishing touches

10 - A handful (2 cups) of fresh spinach leaves, roughly chopped
11 - Chopped fresh parsley leaves for a pop of color

# Steps:

01 - Pour olive oil into your pan and place it over medium heat. Toss in the onion and garlic, stirring around for about 2-3 minutes until they smell amazing and look a bit see-through.
02 - Drop the diced sweet potatoes into the pan and let them cook for roughly 10 minutes, mixing now and then. You want them to soften up but not completely lose their bite.
03 - Scoot the sweet potatoes to the side and add the turkey into the open spot. Break it apart with your spoon and cook for 5-7 minutes until it turns brown and loses its pink color.
04 - Scatter the cumin, smoked paprika, and some salt and pepper over everything in the skillet. Stir well so the flavors get mixed with the veggies and turkey evenly.
05 - Toss in the chopped spinach and bell pepper. Cook for 3-4 minutes until the spinach shrinks and the bell pepper softens. Turn off the heat and sprinkle parsley on top before digging in.
