Lay tortillas flat on a surface. Spread about 2 tablespoons of pizza sauce on each tortilla. Sprinkle each with 1/4 cup of shredded mozzarella cheese. Arrange 4 pepperoni slices on top, and sprinkle with Italian seasoning.

Roll each tortilla tightly and place seam-side down on the baking sheet.

Lightly spray the tops of the roll-ups with olive oil for a crispier texture. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
