Preheat oven to 350°F (175°C). Grease 16 cups of a mini muffin pan.

Add 2 teaspoons of mozzarella to each greased cup, patting it down lightly. Place 3 slices of mini pepperoni on top of each chip. Optionally, sprinkle with Italian seasoning for additional flavor.

Bake chips for about 8 minutes, or until edges are a dark golden brown.

Let chips cool in the muffin pan until they are cool enough to handle. Remove chips and place on a paper towel–lined plate to absorb excess oil.

Serve warm. Chips can be eaten plain or paired with marinara sauce.
