BBQ Chicken Sandwich (Print Version)

# Ingredients:

→ For the Sandwich

01 - 8 slices of cheddar cheese (or blend it with mozzarella if you'd like)
02 - 1/2 cup BBQ sauce, with extra for drizzling if you're into that
03 - 8 slices of bread (sourdough is a great choice)
04 - Optional add-ons: cilantro, pickled jalapeños
05 - 2 tablespoons softened butter
06 - 2 cups of shredded cooked chicken (rotisserie chicken is super handy)
07 - 1/2 red onion, sliced thinly

# Instructions:

01 - Grab a bowl and toss your chicken with the BBQ sauce until it's all coated evenly. Add a bit more sauce if you like it on the saucy side.
02 - Start by laying 4 slices of bread flat. On each slice, stack it up with one slice of cheese, BBQ chicken, onion slices, any of the optional toppings if you'd like, and a second slice of cheese. Place another slice of bread on top.
03 - Spread the butter on the outside of the bread slices. Make sure the top and bottom of every sandwich get a good layer of butter.
04 - Heat up a skillet on medium heat. Pop the sandwiches in, buttered side hitting the pan, and toast them for about 3-4 minutes until they look golden and crisp. Flip them, and cook for another 3-4 minutes. Gently press the sandwiches while cooking to melt the cheese evenly.
05 - Let the sandwiches rest for a moment before slicing them in half. Serve right away, and feel free to add a drizzle of extra BBQ sauce if you'd like.
