Grab a bowl and toss your chicken with the BBQ sauce until it's all coated evenly. Add a bit more sauce if you like it on the saucy side.

Start by laying 4 slices of bread flat. On each slice, stack it up with one slice of cheese, BBQ chicken, onion slices, any of the optional toppings if you'd like, and a second slice of cheese. Place another slice of bread on top.

Spread the butter on the outside of the bread slices. Make sure the top and bottom of every sandwich get a good layer of butter.

Heat up a skillet on medium heat. Pop the sandwiches in, buttered side hitting the pan, and toast them for about 3-4 minutes until they look golden and crisp. Flip them, and cook for another 3-4 minutes. Gently press the sandwiches while cooking to melt the cheese evenly.

Let the sandwiches rest for a moment before slicing them in half. Serve right away, and feel free to add a drizzle of extra BBQ sauce if you'd like.
