Step-by-Step Instructions

Make the Beef Barbacoa:
Prepare the Beef Pat the chuck roast dry with paper towels and set aside to help it brown better when searing
Brown the Beef:
Heat oil in a Dutch oven over medium high Cook the roast for about five minutes per side until a deep golden brown crust forms Then set the meat aside which builds depth in the finished dish
Build Flavor Base:
Pour beef broth into the pot to deglaze scraping up all the browned bits Stir in chipotle peppers adobo sauce salt pepper onion powder allspice bay leaves garlic cumin and oregano until evenly combined This creates an aromatic and flavorful braising liquid
Braise the Beef:
Return the browned roast to the pot Nestle it in the liquid bring to a boil then cover and transfer to a preheated 350 degree oven Cook for four to five hours turning halfway through if desired When the beef is fork tender it is ready
Make the Sauce:
Lift out the beef and discard the bay leaves Whisk tomato paste into the braising liquid until fully dissolved Simmer briefly to thicken then adjust salt and pepper to taste The sauce should be rich and slightly tangy
Shred and Season the Beef:
Using two forks pull the beef into shreds Mix in about half the sauce to keep it succulent Pour fresh lime juice over and toss to coat so every strand is bright and zesty
Assemble the Enchiladas:
Prepare the Baking Dish Lightly grease a 9 by 13 inch dish Spoon a small amount of sauce in the bottom so the enchiladas do not stick Fill and Roll Tortillas Spoon refried beans then barbacoa beef and a sprinkle of cheese into each tortilla Roll up snugly and lay seam side down in the baking dish Repeat with remaining tortillas
Top and Finish:
Once all are rolled pour remaining sauce over to cover Sprinkle rest of the cheese on top for extra melt and flavor Bake Cover with foil and bake at 375 for twenty minutes Remove the foil and bake ten minutes more until bubbly and golden then let rest for ten to fifteen minutes so everything settles and flavors meld
Finish and Serve:
Add generous toppings right before serving My favorite is loads of cilantro fresh diced onion and creamy avocado plus lime wedges for squeezing

I have a soft spot for the chipotle in adobo The smoky aroma fills my kitchen and signals a special meal The first time my daughter helped shred the beef she kept sneaking bites and her giggles made the process twice as fun

Storage Tips

Leftover enchiladas keep beautifully in an airtight container in the fridge for three days For longer storage freeze unbaked enchiladas tightly wrapped then bake directly from frozen adding about fifteen minutes to the bake time Always let the dish cool before covering to prevent soggy tortillas

Substitutions and Ingredient Swaps

If you are out of Monterey Jack mozzarella or Oaxaca also melt well For a gluten free option use corn tortillas Instead of refried beans try black beans for a heartier texture If you are short on time substitute good quality storebought pulled beef

Serving Suggestions

These enchiladas are filling on their own Serve with a fresh green salad or Spanish rice for a classic combo Simple pickled onions and a dollop of sour cream balance the richness and add refreshing crunch
