Breakfast Hand Pies Bacon Egg (Print Format)

Crisp biscuit pockets filled with bacon, eggs, and cheddar, finished with onion butter. Quick, satisfying morning option.

# Ingredients:

→ Hand Pies

01 - 1 tablespoon vegetable oil
02 - 1 small onion, diced (approximately 1 cup)
03 - 6 large eggs, beaten
04 - 1 teaspoon salt
05 - 1 teaspoon pepper
06 - 1 can (8 count) Pillsbury Grand biscuits
07 - 2 cups sharp cheddar cheese, shredded and divided
08 - 6 slices bacon, cooked and crumbled

→ Seasoned Butter

09 - ¼ cup (57g) butter, melted
10 - ½ teaspoon onion powder
11 - 1 teaspoon parsley

# Steps:

01 - In a medium skillet, heat oil over medium heat. Add diced onions and cook until translucent (about 5 minutes).
02 - Add lightly beaten eggs to the skillet. As eggs begin to set, gently pull the eggs across the pan with a spatula. Repeat this process until no visible liquid egg remains. Remove from heat, season with salt and pepper, and set aside.
03 - Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about 1/8-inch thickness.
04 - Evenly distribute the cooked eggs on top of the flattened biscuits, leaving room around the rim. Top each with 1/4 cup of shredded cheese and crumbled bacon.
05 - Wet your finger with water and rub it around the rim of each biscuit. Fold each into a half-moon shape, sealing it. Using a fork, press the edges together to bind the seal.
06 - Spray the basket of your air fryer with nonstick cooking spray. Working in batches, place the pockets in the basket and spray the tops with cooking spray. Air fry at 360°F for 5 minutes, then carefully turn over the pockets and air fry for another 4 minutes.
07 - While the hand pies are cooking, prepare the butter topping by combining the melted butter with onion powder and parsley in a small bowl.
08 - Use tongs to remove the hand pies from the air fryer. Brush the melted butter on top of each one. Place the hand pies back into the air fryer to cook for one additional minute.
09 - Remove the hand pies from the air fryer. Serve warm with ketchup or salsa.
