Heat a large skillet over medium-high heat and brown the ground beef with chopped onion. Season with salt, pepper, cumin, paprika, chili powder, and onion powder. Once the beef is fully cooked, drain any extra grease from the skillet.

Add minced garlic and chopped hot dogs to the skillet. Stir together well. Add the can of drained Rotel, chili beans, and tomato paste. Stir until fully combined and let simmer for a few minutes.

Top the mixture with shredded Colby Jack cheese and crispy crowns.

Bake in the oven at 400°F (200°C) for about 25 minutes. For extra crispy topping, broil for a few minutes.
