Chipotle Ranch Chicken Burritos (Print Format)

Grilled chicken, fresh veggies, creamy chipotle and avocado ranch, wrapped in toasted tortillas for a smoky, flavorful meal.

# Ingredients:

→ Tortillas

01 - 8 large flour or wheat burrito tortillas

→ Vegetables

02 - 4 cups shredded iceberg lettuce
03 - 1.5 cups diced Roma, slicing, or vine tomatoes
04 - 1 large Hass avocado, diced

→ Protein

05 - 1 lb grilled chicken, cubed or shredded

→ Cheese

06 - 2 cups shredded Mexican blend or cheddar cheese

→ Crunchy topping

07 - 3 oz crunchy tortilla strips

→ Dressings

08 - Avocado ranch dressing
09 - Chipotle ranch dressing

# Steps:

01 - Heat tortillas for a few seconds in a dry skillet over medium-low heat until soft and pliable for folding.
02 - Divide ingredients evenly among tortillas: place about ½ cup shredded lettuce, ⅓ cup grilled chicken, ¼ cup shredded cheese, 3 tablespoons diced tomatoes, and ⅛ of a diced avocado in the center of each tortilla. Sprinkle with crunchy tortilla strips and add 1 tablespoon each of chipotle ranch and avocado ranch dressings.
03 - Fold the sides of each tortilla inward then roll tightly to enclose the fillings securely.
04 - Lightly spray a frying pan with cooking spray and warm over medium heat. Place burritos seam-side down in batches if necessary, cooking a few minutes per side until golden brown and toasted.
05 - Remove from heat and serve immediately. Optionally accompany with cilantro lime or cantina rice and Mexican style black beans. Drizzle additional avocado or chipotle ranch dressing as desired.
