Combine light corn syrup, softened butter, mint extract, salt, and green food coloring in a medium-sized bowl. Stir until well mixed.

Gradually stir in 1 cup of powdered sugar at a time until the mixture becomes too stiff to stir.

Add more powdered sugar and knead the mixture by hand until it no longer sticks to your hands, adding additional powdered sugar as needed.

Roll dough into 1-inch balls and place them on wax paper-lined baking sheets. Flatten each ball using the bottom of a flat cup or your hand.

Cover patties with another sheet of wax paper and refrigerate for 60-90 minutes until firm.

Melt the chocolate candy coating according to the package directions.

Dip each patty into the melted chocolate using a fork, tap off excess chocolate, and place back on the wax paper.

Let the chocolates set until firm. Store in an airtight container or freeze in single layers separated by waxed paper as desired.
