This Dorito taco pasta salad brings together some of my favorite party flavors in one bowl The seasoned ground beef two kinds of cheese a quick Catalina dressing and crushed Doritos make it the star at every summer cookout I started bringing this dish years ago and now friends always hope I will show up with a big bowl
The first time I tried this I was not sure the Doritos would work but after one bite everyone at our barbecue wanted the recipe and now it is one of my most requested summer salads
Ingredients
- Rotini pasta: This spiral pasta catches the dressing and holds up well after chilling Look for bronze cut pasta for the best texture
- Ground beef: Choose 80 or 85 percent lean for flavor Drain off grease well for a lighter salad
- Taco seasoning: Quality seasoning makes a difference I like using a homemade blend but a packet works if you are in a hurry
- Cherry tomatoes: Ripe and sweet they add freshness and color Grape tomatoes work too
- Green onions: Mild and crisp they brighten everything Pick ones with fresh bright green tops
- Sharp cheddar cheese and Monterey Jack cheese: The mix gives both tang and melt Try shredding your own for the best texture and flavor
- Catalina dressing: This sweet and tangy dressing ties all the Tex Mex flavors together Store bought works but I like making my own if I have time
- Nacho cheese Doritos: These add that signature crunch and bold cheesy kick Do not add until just before serving so they do not get soggy
- Fresh cilantro: Brings brightness and a classic taco salad flavor Pick leaves that look perky and smell fresh
Step by Step Instructions
- Cook the Pasta:
- Fill a large pot with salted water and bring it to a boil Add the rotini pasta and stir occasionally Cook according to package directions just until al dente About two minutes before the timer goes off test a piece to make sure it is cooked but still firm Pour into a colander drain and immediately rinse with cold water until the pasta is completely cool This stops the cooking and keeps the pasta from getting mushy
- Brown the Ground Beef:
- While the pasta cooks set a large skillet over medium high heat Add the ground beef and break it apart with a spatula Cook for six to eight minutes stirring frequently until the beef loses all its pink and begins to brown Drain off all excess grease so the salad will not taste overly heavy
- Season the Beef:
- Return the drained beef to your skillet over medium low heat Sprinkle the taco seasoning over the meat Add the amount of water listed on your seasoning packet Stir everything together until well combined and let it simmer for three to five minutes until most of the liquid has evaporated This lets the beef soak up all those taco spices Remove from the heat and set aside to cool
- Combine the Salad:
- In a very large mixing bowl add the cooled rotini pasta cooled taco beef halved cherry tomatoes sliced green onions shredded cheddar and Monterey Jack cheese Make sure all ingredients are at least close to room temperature so the cheese does not melt and clump Stir with a big spoon to evenly distribute
- Add the Dressing:
- Pour the Catalina dressing all over the pasta mixture Use clean hands or a large spoon to gently toss everything together ensuring every piece is lightly coated in dressing You want everything glistening and flavorful but not swimming in liquid
- Chill the Salad:
- Cover the bowl tightly with plastic wrap or a lid and transfer to the refrigerator Let it chill for at least four hours preferably longer so the flavors blend and the salad firms up
- Finish and Serve:
- Right before serving fold in the crushed Doritos and toss gently Top with plenty of chopped fresh cilantro Serve immediately for maximum crunch
I always look forward to adding the Doritos right before serving because my kids love sneaking some extra on top There is something about mixing the warm taco flavors with that tangy dressing that takes me right back to our family lake picnics
Storage Tips
Store leftover pasta salad tightly covered in the refrigerator for up to three days For best texture keep Doritos separate and add fresh right before eating If the salad looks dry after chilling add an extra splash of Catalina dressing and toss before serving
Ingredient Substitutions
Swap out ground beef for ground turkey or even black beans to make it vegetarian Monterey Jack cheese can be replaced with pepper jack if you want extra heat If you cannot find Catalina dressing French dressing works in a pinch
Serving Suggestions
This salad holds its own as a side for grilled chicken burgers or hot dogs It pairs especially well with icy lemonade or fresh watermelon slices If I am bringing it for a meal I serve it with extra sliced avocado lime wedges and sometimes a dash of hot sauce
