# Ingredients:

01 - 12 street taco size tortillas
02 - 1 handful of spinach
03 - 1 cup shredded cheddar cheese
04 - 6 eggs
05 - 1 splash of milk
06 - Salt and pepper to taste
07 - 4 pieces cooked bacon
08 - Hot sauce for serving

# Steps:

01 - Heat tortillas in the microwave for 40 seconds.
02 - Place the warm tortillas into a muffin pan, pressing them down gently to form cups.
03 - Finely chop the spinach and add a small amount to each tortilla cup.
04 - Sprinkle shredded cheddar cheese over the spinach in each tortilla.
05 - Whisk together the eggs, milk, salt, and pepper in a bowl.
06 - Pour the whisked egg mixture into each tortilla cup, filling them halfway.
07 - Chop the cooked bacon into small pieces and sprinkle on top of the egg mixture in each cup.
08 - Bake in the oven at 375°F (190°C) for 20 minutes or until the eggs are fully set.
09 - Top the egg bite cups with hot sauce, if desired, and serve warm.
