Easy Tuna Melt Sandwich (Print Version)

# Ingredients:

→ Tuna Mixture

01 - 1 can (5-ounce) tuna in water, no salt added, drained
02 - 1 small celery stick, diced
03 - 2 tablespoons roasted red peppers, jarred and chopped
04 - 1 minced scallion
05 - 3 tablespoons plain, low-fat Greek yogurt
06 - 1 teaspoon of Dijon mustard
07 - 1/4 teaspoon black pepper

→ Bread and Toppings

08 - 4 teaspoons softened butter or mayo
09 - 4 slices of whole-grain bread
10 - 2 slices of sharp Cheddar cheese

# Instructions:

01 - In a bowl, toss together the tuna you've drained, diced celery, red peppers, scallion, yogurt, Dijon mustard, and some pepper. Stir until everything's combined nicely.
02 - Take 1 teaspoon of mayo (or spreadable butter) and coat one side of each bread slice. Lay 2 slices down, mayo-side facing down. Spread half the tuna mix on each one, add a slice of cheddar over the tuna, and top with the other bread slices, mayo-side up.
03 - Warm up a big pan over medium heat. Place your sandwiches in the pan and let them cook until golden on one side, about 3-5 minutes. Flip, then cook the other side for another 3-5 minutes until the cheese melts and the bread crisps up.
04 - Take the sandwiches out of the pan and serve right away while they're hot and gooey.

# Notes:

01 - Greek yogurt makes it lighter by swapping some of the mayo with extra protein added in.
02 - Using tuna without any added salt helps lower the sodium here.
03 - For crunchier bread, go with butter instead of mayo on the outside.
