Egg Tortilla Breakfast Delight (Print Format)

A tasty dish featuring eggs, tortillas, fresh vegetables, and melted cheese for a hearty start.

# Ingredients:

01 - ½ medium red bell pepper, finely diced or shredded
02 - 2 medium spring onions (scallions), chopped
03 - 1 small red onion, sliced into rings
04 - 4 small mushrooms or 1 large Portobello mushroom, sliced
05 - ¼ small red chili, optional, sliced
06 - 2 tablespoons fresh parsley, finely chopped

07 - 100 g (3.5 oz) grated cheese

08 - 4 tortillas, gluten free if required
09 - 1 tablespoon olive oil
10 - 1 pinch salt
11 - ⅐ teaspoon black pepper

# Steps:

01 - Gather all ingredients. Wash and chop the vegetables as indicated. Set aside.
02 - Heat a pan over medium flame with a drizzle of olive oil. Add sliced mushrooms and cook for 2 minutes on each side until tender. Remove from pan and set aside.
03 - In the same pan, add chopped spring onions and cook for 2 minutes, stirring occasionally. Gently crack in eggs and cook until done to preference.
04 - Heat a separate pan over medium heat. Place one tortilla in the pan, scatter diced red peppers over it, and cover to cook for 2 minutes. Add grated cheese on top and cook until the cheese melts.
05 - Place cooked mushrooms and one egg onto the tortilla. Season with salt and black pepper. Garnish with red onion rings, fresh parsley, and optional red chili slices or flakes. Serve immediately.

# Tips:

01 - For softer peppers, cook them together with the scallions. Adding ham is optional to increase protein content. When preparing for more than four servings, consider baking tortillas with toppings in the oven.
