Mediterranean White Pizza (Print Version)

# Ingredients:

01 - 1/2 teaspoon optional chili flakes.
02 - 1 teaspoon oregano, dried.
03 - 2 tablespoons olive oil, split.
04 - 1/2 cup shredded mozzarella cheese.
05 - 1/2 cup feta, crumbled.
06 - 2 cups chopped fresh spinach.
07 - 1 garlic bulb.
08 - 1/4 cup heavy whipping cream.
09 - 1/4 cup finely shredded Parmesan.
10 - 1/2 cup room-temperature cream cheese.
11 - 1/2 cup fresh ricotta cheese.
12 - 1 pizza dough ball, homemade or bought.

# Instructions:

01 - Take off garlic's top, drizzle with oil and sprinkle some salt, then wrap it in foil. Roast at 400°F for about 35 minutes or until the cloves are totally soft.
02 - Mash roasted garlic into a paste. Blend it with ricotta, Parmesan, cream cheese, and cream. Add some seasoning for taste.
03 - Turn oven up to 475°F. Flour your counter and stretch out the dough to the size you need.
04 - Spread that tasty white sauce, add spinach, sprinkle on the cheeses, and finish with the oregano and optional chili flakes. Drizzle a bit of olive oil over everything.
05 - Pop it into the oven and bake for around 12-15 minutes, or until the cheese is bubbly and the edges of the crust turn golden.

# Notes:

01 - Want more flavor? Toss on some olives or sundried tomatoes.
02 - A pizza stone works great for a crispier crust.
