Goat Cheese Mushroom Pastry (Print Version)

# Ingredients:

01 - 4 ounces goat cheese.
02 - 1/4 cup white wine.
03 - 3 garlic cloves, finely minced.
04 - 8 ounces sliced mushrooms.
05 - 1 shallot, diced small.
06 - 1/4 teaspoon each of thyme, sage, and rosemary.
07 - 1/3 cup chopped parsley.
08 - 2 tablespoons olive oil.
09 - 10 squares of puff pastry (about 4 inches each).
10 - 1/4 cup parmesan cheese.
11 - 1 egg for brushing the tops.

# Instructions:

01 - Set the oven to 400°F. Spread your pastry squares onto baking sheets. Prick them all over with a fork.
02 - Cook the garlic and shallots in some oil over heat. Toss in the mushrooms and herbs, stirring for a couple minutes. Pour in white wine and let it cook an extra 4-5 minutes.
03 - Stir together the cheeses and parsley. Keep stirring until it's melted and smooth.
04 - Spoon the filling over the pastry squares. Fold or crimp edges however you like. Brush egg wash on top.
05 - Bake for around 25-30 minutes till the color turns a nice golden brown.

01 - Grab frozen puff pastry squares to save time.
02 - Let the pastry thaw overnight in the fridge.
