Throw oats, peanut butter, sweetener (honey or maple syrup), salt, and vanilla into a bowl. Mix it all up until it’s uniform and sticky.

Use a spoon to scoop mixture into a mini muffin tray. Press it in tightly to hold its shape. Silicone or liners make removal simpler.

Warm up chocolate chips in short microwave bursts (15 seconds). Stir after each round until smooth. Spread or drizzle on formed cups if you like.

Stick the tray in the fridge for at least an hour so everything firms up. Then pop them out and enjoy.
