Pizza Enchilada Bake Beef (Print Format)

01 - 1 lb lean ground beef
02 - 1 cup diced yellow onion
03 - 1 medium green bell pepper, diced
04 - 3 oz pepperoni, chopped
05 - 1 tablespoon chopped garlic
06 - 1/3 cup pizza sauce
07 - 1 tablespoon Italian seasoning
08 - 1 cup ricotta cheese
09 - 1 cup mozzarella cheese
10 - 1/3 cup crumbled bacon
11 - 8 large flour tortillas

12 - 2 cups pizza sauce
13 - 2 1/2 cups shredded mozzarella cheese
14 - 3 oz pepperoni slices
15 - 1/4 cup crumbled bacon

# Steps:

01 - Preheat oven to 375°F.
02 - Place lean ground beef in a large skillet over medium-high heat and crumble it as it cooks.
03 - Once the beef is browned, add diced onions, bell peppers, and chopped pepperoni to the skillet. Stir well and cook until vegetables are softened.
04 - Add chopped garlic to the skillet. Stir well and cook for 2 minutes.
05 - Remove the skillet from heat. Add pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon. Stir until fully combined.
06 - Lay out flour tortillas and place a portion of the beef mixture down the center of each tortilla.
07 - Roll up the tortillas and place them, seam-side down, on a baking sheet greased with cooking spray.
08 - Pour pizza sauce over the rolled tortillas. Sprinkle with shredded mozzarella, pepperoni slices, and crumbled bacon.
09 - Bake in the oven for 20-25 minutes, or until the cheese is fully melted and golden brown on the edges.
10 - Remove from the oven and serve immediately.
