Preheat the oven to 350°F (175°C).

Heat a skillet over medium heat and cook sausage links for 10-12 minutes. Remove them to a paper towel-lined plate.

In a small bowl, whisk together eggs and 1 teaspoon of milk until combined.

Melt butter in a non-stick skillet over medium heat. Add the whisked eggs and stir gently with a spatula until almost set. Sprinkle with salt, pepper, and chives. Remove from heat.

Unroll the crescent dough and arrange each triangle on a baking sheet. Place one sausage link, 1 tablespoon of scrambled eggs, and a large pinch of cheese on each triangle. Roll each crescent tightly and leave on the baking sheet.

Brush the top of each crescent with the reserved tablespoon of whisked egg. Sprinkle with Parmesan cheese if desired.

Bake in the preheated oven for 18-20 minutes or until golden brown.
