Cook sausage until fully done. Set aside.

Trim crusts, roll each slice flat with a rolling pin.

Whisk eggs, milk, vanilla, and cinnamon in a shallow bowl.

Place sausage on edge of bread, roll tightly. Secure with a toothpick if needed.
