In a bowl, combine grated carrot, peas, sweet corn, finely chopped capsicum, onion, and grated ginger.

Add veg mayonnaise, chopped coriander, pepper powder, mixed herbs, and salt to the bowl. Mix all ingredients well to combine evenly.

Spread butter on one side of each bread slice (optional).

Spread the prepared mayo stuffing evenly on one slice of bread. Cover with another slice of bread to form the sandwich.

Trim the edges of the sandwich, if desired, and cut each sandwich into halves. Serve and enjoy.
